Mango Drink

Puree one cup of chopped mango in a blender with ½ cup chilled orange juice and 3 tbsp. honey. Combine with 2 cups milk in a mixing bowl and whisk until frothy. Pour into glasses to serve.

Note: 1 cup of chilled mango nectar can be substituted for the chopped mango. If nectar is used, it is not necessary to use a blender. Just mix all the ingredients in a bowl.

Rice Almond Pudding

Stir 4 cups of milk and ¼ cup of rice flour in a pan until smooth. Cook and stir over medium heat for about 10 minutes or until the mixture starts to thicken. Add ¾ cup of sugar and stir 3 to 4 minutes more. Pour into serving dishes and sprinkle each serving with 1 tbsp sliced almonds. Serve warm.

Unday Ka Halva

Mix 3 eggs, ¼ cup sugar, ¼ cup butter, ¼ cup crushed almonds, and ½ cup raisins in a medium saucepan. (Optional: stir in 1/8 cup crushed pistachios and a pinch of cardamom.) Stir constantly over low to medium heat until the mixture thickens. Pat the mixture into a one-inch layer on a cookie sheet. Cool it in the refrigerator, then cut into squares to serve.

The North Korean Alphabet and Some Words

“Chosongul” is the name of the Korean alphabet. It has 24 letters. Chosongul is a phonetic system of writing. Its symbols stand for sounds. To form words or syllables, letters are clustered together in groups.

For example, the Korean word for “school” is “hakkyo.” It is pronounced “HAHK-gyoh.”

Here is how the letters in “hakkyo” are written in Korean and how the entire word is written. Can you find the individual letters in the symbol for “hakkyo?”

The North Korean Flag

A Treat from Azerbaijan

What you will need:

  • 4 Apricots
  • Sugar
  • Lemon Juice
  1. Peel, chop, and mash 4 apricots to make about 1 cup of fruit.
  2. Combine with ¾ cup sugar and 1 tsp. lemon juice in a saucepan.
  3. Stir over medium heat until the mixture reaches a rolling boil.
  4. Continue to stir for 3 more minutes while boiling.
  5. Cool in the refrigerator for at least an hour.
  6. Eat by the teaspoonful while drinking tea.
